ABSTRACT Objective This study aimed to evaluate the perception and sensory acceptance of sweet taste by individuals who work/study on different shifts. Methods Three groups of individuals were recruited: the Control group (individuals that study during the day and do not work at night), Group 1 (individuals that study in the evening) and Group 2 (individuals that work overnight). The individuals were submitted to a detection threshold test using sucrose solutions and a sensory acceptance test using a structured hedonic scale and a Just-About-Right scale for sweet taste in blancmange. Results The detection thresholds were significantly higher for Groups 1 and 2. Individuals of Group 2 had a preference by blancmanges when having high sucrose concentrations, as well as had an ideal concentration of 10.50% sucrose against 5.95% sucrose for the Control group. Conclusion Our study shows a relationship between changes in the circadian cycle and the sensory perception and acceptance of sweet taste. More studies need to be performed to understand such relationships and their repercussions better.


RESUMO Objetivo O objetivo deste estudo foi avaliar a percepção e a aceitação sensorial do gosto doce por indivíduos que trabalham/estudam em diferentes turnos. Métodos Foram recrutados três grupos de indivíduos: Grupo Controle (indivíduos que estudam durante o dia e não trabalham à noite), Grupo 1 (indivíduos que estudam à noite) e Grupo 2 (indivíduos que trabalham de madrugada). Os indivíduos foram submetidos ao teste de limiar de detecção utilizando soluções de sacarose e aos testes de aceitação sensorial utilizando escala hedônica estruturada e escala do ideal para o gosto doce em manjar branco. Resultados Os limiares de detecção foram significativamente maiores para os Grupos 1 e 2, sendo certo que os indivíduos do Grupo 2 tiveram preferência pelos manjares com altas concentrações de sacarose, assim como apresentaram uma concentração ideal de 10,50% de sacarose contra 5,95% de sacarose para o grupo Controle. Conclusão Este estudo mostra uma relação entre mudanças no ciclo circadiano e a percepção e a aceitação sensorial do gosto doce, mostrando que estudos mais aprofundados precisam ser realizados para entender melhor tais relações e suas repercussões.

ABSTRACT

Extruded breakfast cereals they have low nutritional and high energetic values. The aim of this study was to develop extruded breakfast cereals by replacing part of corn meal by different proportions of by-products of grape (5-10%) and peach palm (7.5-15%). Samples were sweetened with xylitol while moisture was controlled with grape juice. Six formulations, which were produced in a 22 experimental design, were analyzed regarding their composition, besides their technological, mechanical, antioxidant and sensory properties. Addition of different amounts of flours, produced with the wastes of grape (GF) and peach palm (PF), increased the dietary fibers and antioxidant contents of cereals formulations. However, at the highest levels addition, there was a decrease in expansion and an increase in hardness and water solubility properties. Thus, the incorporation of grape and peach palm by-products at smaller proportions showed higher viability, since they exhibited satisfactory sensory acceptance, technological properties and bowl life.


Os cereais matinais apresentam baixo valor nutricional e alto valor energético.O objetivo deste estudo foi desenvolver cereais matinais extrusados substituindo parte da farinha de milho por diferentes proporções de subprodutos de uva (5-10%) e palmito pupunha (7.5-15%). As formulações foram adoçadas com xilitol e a umidade controlada com suco de uva. Seis formulações foram produzidas utilizando o delineamento experimental 22,onde foram analisados com relação à composição proximal, propriedades tecnológicas, mecânicas, antioxidantes e sensoriais. A adição de diferentes quantidades de farinhas produzidas com os subprodutos de uva (FU) e palmito pupunha (FP) aumentou as fibras dietéticas e o conteúdo de antioxidantes nas formulações de cereais matinais desenvolvidas. No entanto, nos mais altos níveis de adição ocorreram um decréscimo na expansão e aumento na dureza e solubilidade em água. A incorporação de subprodutos de uva e palmito pupunha em menores proporções mostrou alta viabilidade, pois apresentaram satisfatória aceitação sensorial, propriedades tecnológicas e bowl life.

ABSTRACT This study describes the development of mixed flour added of maca for gluten-free bread (GFB) employing a Simplex Centroid Design. Four pseudo-components were evaluated in order to improve the GFB specific volume and texture profile analysis: maca (MC; 0.25 to 0.75), potato starch (PS; 0.25 to 0.75), sweet manioc flour (SEM; 0 to 0.25), and sour manioc flour (SOM; 0 to 0.25). The best GFB formulation - by desirability results - was evaluated regarding physio-chemical, microbiological aspects, and sensory acceptance. The responses specific volume and hardness were adjusted with a special cubic model (R2= 0.973 and 0.913), while cohesiveness, springiness and chewiness was adjusted with a linear model. The significant contribution of maca into GFB dough was evident in the models, and the desirability results indicated an appropriate mixed flour composed by MC (0.25), PS (0.5), and SEM (0.25). The GFB elaborated with this mixed flour generated a product well accepted (acceptability index higher than 73.9%) for attributes of aroma, colour, texture, flavour, and overall acceptance. The values of physio-chemical parameters obtained in the present article was in the range described for GFB in the literature. In addition, the processing method applied allowed for obtaining a GFB that was microbiologically stable.


RESUMEN Este estudio describe el desarrollo de la harina mezclada (MF) agregada de maca para la elaboración de pan sin gluten (GFB) empleando un Diseño Centroide Simplex. Se evaluaron cuatro pseudo-componentes para mejorar el volumen específico y el perfil de textura de GFB: maca (MC; 0,25 a 0,75), almidón de patata (PS; 0,25 a 0,75), harina de yuca dulce (SEM; 0 a 0,25), y harina de yuca agrio (SOM; 0 a 0,25). La mejor formulación de GFB - por la deseabilidad - se evaluó en relación con los aspectos fisicoquímicos, microbiológicos, y sensoriales. El volumen específico y la dureza se ajustaron a un modelo cúbico especial (R2= 0,975 y 0,913). La cohesión, elasticidad y masticabilidad se ajustaron a un modelo lineal. La contribución de la maca a la masa de GFB fue evidente en los modelos, y los resultados indican una MF apropiada compuesta por MC (0,25), PS (0.5) y SEM (0,25). El GFB elaborado con esta MF genera un producto aceptado (índice de aceptabilidad mayor que 73,9%) para aroma, color, textura, sabor y aceptación general. Los parámetros físico-químicos obtenidos estaban en el rango descrito para GFB en la literatura y GFB se mostró microbiológicamente estable.

ABSTRACT

Abstract Fishburgers were made with washed mechanically separated meat (MSM) from carcass and filleting by-product (both washed and unwashed) of the Nile tilapia. The proximal composition of fishburgers was different and varied according to the raw material used, as well the color parameters. Fishburgers with MSM from filleting by-product had lower hardness and springiness, and fishburger with MSM from unwashed filleting by-product had higher yield and lower reduction in thickness. The fishburgers containing MSM from filleting by-product had better sensory acceptance, due to higher color intensities (sensory), fish odor, tenderness, succulence, cohesiveness and fish flavor. The fishburger with MSM from washed carcass was the least acceptable, because of surface uniformity. This study shows the potentiality of using MSM from tilapia filleting by-product for burgers, while the formulation of fishburgers with smaller amounts of MSM from washed carcass or with added condiments can result in improved sensory acceptance and potentiality of use.

Abstract The aim of this work was to study the impact of the roasting temperature (80, 120 and 160 °C) and time (20, 40 and 60 min) of cocoa beans on the sensory acceptability of chocolate using response surface methodology. The results revealed that there was higher impact of roasting temperature and no influence of roasting time (in the studied levels). Lower score of consumers' sensory acceptability was found at higher roasting temperature of cocoa beans (160 °C). The chocolate samples presented undesirable burnt odor and flavor. Roasting temperatures range 90 to 110 °C were found optimum for higher consumer's acceptability scores (appearance, aroma, flavor, texture and overall quality attributes). Ten trained assessors consensually defined fifteen descriptors showing similarities and differences among the chocolate samples, using the methodology based on Quantitative Descriptive Analysis. The Principal Component Analysis showed that A, B and C treatments (80 °C) were characterized primarily by the brown color, sweet aroma and flavor attributes. The treatments D, E and F (120 °C) were characterized by reddish brown color, bitterness, burnt aroma and flavor, astringency attributes.

ABSTRACT: The aim of this study was to characterize five different hybrid cultivars pears ('Tenra', 'Centenária', 'Cascatence', 'Primorosa' and 'Seleta') deployed in subtropical regions of Brazil regarding its physicochemical characteristics, bioactive compounds and antioxidant activity, as well as to evaluate the influence of these cultivars on the characteristics physicochemical, rheological properties and sensory acceptance of the obtained jelly, for identifying varieties with higher potential for industrial use. Regardingthe bioactive compounds and antioxidant activity it was observed that 'Seleta' cultivar was characterized by a higher phenolic content (57.68mg GAEs 100g-1), higher antioxidant activity (13.56% of DPPH sequestration and 1.25µM of trolox g -1) and higher content of vitamin C (3.59mg 100g-1). As the acidity, it ranged from 4.09 to 5.81 g of malic acid 100g-1 ('Tenra' and 'Seleta', respectively). Regarding color, the color parameter L* varied from 32.14 to 36.83, a* ranged from 2.87 to 5.20, b* ranged from 16.57 to 20.42, Chroma ranged from 16.67 to 21.02 and °Hue ranged from 74.94 to 80.18. Regarding the texture, the jellies produced from 'Centenária' and 'Tenra' were characterized by having the highest values of hardness (1.21 and 1.23N, respectively), gumminess (0.42 and 0.45, respectively) and chewiness (0.40 and 0.45N, respectively). The jelly obtained from the 'Centenária' still showed the highest adhesiveness (2.27N s-1) and springiness (0.99). Already jellies prepared by 'Cascatence' showed the highest cohesiveness values (0.68). The jellies prepared with different pear cultivars showed good sensory acceptance for all measured properties, with average scores ranging between the hedonic terms "liked slightly" to "liked very much". Cultivars of subtropical pear trees present different physicochemical characteristics, resulting in jellies with different physicochemical characteristics and rheological properties. Processing in the form of jelly is extremely viable due to the good acceptance by consumers of all formulations elaborated.


RESUMO: O objetivo deste estudo foi caracterizar cinco diferentes cultivares híbridas de peras ('Tenra', 'Centenária', 'Cascatence', 'Primorosa' e 'Seleta') implantadas em regiões subtropicais do Brasil quanto as caracteristicas físico-química, compostos bioativos e atividade antioxidante, bem como avaliar a influência destas cultivares sobre as características físico-químicas, propriedades reológicas e aceitação sensorial da geleia obtida, para identificação de cultivares com maior potentcial para a utilização industrial. Com relação aos compostos bioativos e atividade antioxidante, pode-se observar que a cultivar 'Seleta' caracterizou-se pelo maior teor de fenólicos (57,68mg GAEs 100 g-1), maior atividade antioxidante (13,56% de sequestro de DPPH e 1,25μM de trolox g-1) e se destaca devido ao seu maior teor de vitamina C (3,59mg 100g-1). A acidez, variou de 4,09 a 5,81g de ácido málico 100 g-1 ('Tenra' e 'Seleta', respectivamente). Em relação à cor, o parâmetro de cor L* variou de 32,14 a 36,83, a* variou de 2,87 a 5,20, b* variou de 16,67 a 20,42, Chroma variou de 16,57 a 21,02 e °Hue variou de 74,94 a 80,18. Em relação à textura, as geleias produzidas a partir de 'Centenária' e 'Tenra' caracterizam-se por apresentar os maiores valores de dureza (1,21 e 1,23N, respectivamente), gomosidade (0,42 e 0,45N, respectivamente) e mastigabilidade (0,40 e 0,45, respectivamente). A geleia obtida da 'Centenária' ainda apresentava a maior adesividade (2,27N s-1) e a elasticidade (0,99). Já as geleias preparadas com a 'Cascatence' apresentaram os maiores valores de coesividade (0,68). As geleias preparadas com diferentes cultivares de pera mostraram boa aceitação sensorial para todas as propriedades avaliadas, com notas médias variando entre os termos hedônicos "gostei ligeiramente" e "gostei muito". As cultivares de pereiras subtropicais apresentam características físico-químicas diferentes, resultando em geleias com características físico-químicas e propriedades reológicas distintas. O processamento sob a forma de geleia é extremamente viável devido à boa aceitação por parte dos consumidores de todas as formulações elaboradas.

ABSTRACT

O objetivo deste trabalho foi elaborar biscoitos diet adicionados de farinha da casca do maracujá para avaliação físicoquímica, microbiológica e sensorial por portadores de diabetes. Foram formulados três tipos de biscoitos: um controle sem farinha da casca de maracujá (B1) e dois experimentais adicionados, respectivamente de 7 % (B2) e 10 % (B3) de farinha da casca de maracujá. Inicialmente foram realizadas análises físico-químicas e microbiológicas. O teste sensorial foi realizado por 87 portadores de diabetes tipo II recrutados em Unidades de Saúde da Família em João Pessoa ­ PB. A farinha do maracujá apresentou 23,58 % de fibras e 4,32 % de minerais. Os biscoitos adicionados de farinha da casca de maracujá apresentaram os maiores teores de minerais (entre 2,90 e 2,95 %) e fibras (3,20 e 3,65 %), e o biscoito B3 apresentou maior teor proteico (15,5 %). Todos os biscoitos apresentaram qualidade microbiológica desejável. As notas sensoriais variaram entre "gostei ligeiramente" e "gostei moderadamente" para todos os atributos avaliados, não havendo diferença estatística entre a intenção de compra e a preferência entre os biscoitos. O aproveitamento da casca do maracujá adicionada em biscoitos pode ser uma alternativa viável para diversificar os alimentos existentes no mercado, voltados para os portadores de diabetes.


The aim of this study was to develop to develop diet cookies added of passion fruit peel flourfor physicochemical, microbiological and sensory evaluation by patients with diabetes. Three types of cookies were formulated: control without passion fruit peel flour (B1) and two experimental cookies respectively added of 7 % (B2) and 10 % (B3) passion fruit peel flour. Initially, physicochemical and microbiological analyses were performed. The sensory test was performed by 87 patients with type II diabetes recruited from the Family Health Units of João Pessoa - PB. The flour of passion fruit peel showed 23.58 % fiber and 4.32 % minerals. Cookies added of passion fruit peel flour showed higher mineral (2.90 and 2.95 %) and fiber contents (3.20 and 3.65 %), and biscuit B3 showed higher protein content (15.5 %). All cookies showed desirable microbiological quality. The sensory scores ranged from "liked slightly" and "liked moderately" for all attributes evaluated, with no statistical difference between purchase intention and preference between cookies. The addition of passion fruit peel to cookies can be a viable alternative to diversify existing foods on the market aimed at people with diabetes.

ABSTRACT

Neste trabalho foram desenvolvidas geleias convencionais e dietéticas de umbu-cajá e as características físico-químicas, microbiológicas e sensoriais dos produtos foram avaliadas. No processamento das geleias convencionais foram utilizadas polpa de umbu-cajá, sacarose comercial e pectina de alto teor de metoxilação (ATM). Nas geleias dietéticas, a sacarose e a pectina ATM foram substituídas por aspartame e pectina de baixo teor de metoxilação (BTM). As formulações foram concentradas em tacho aberto até obter o teor de sólidos solúveis totais de ~63 °Brix (produto convencional) e de ~12,5 °Brix (geleia dietética), e então envasilhadas em recipientes de vidro. As geleias foram submetidas a análises microbiológicas e, posteriormente, aos testes de aceitação (cor, aparência, aroma, consistência, sabor, doçura, impressão global), além da intenção de compra. As geleias apresentaram conformidade com os padrões microbiológicos estabelecidos pela legislação.As amostras adicionadas de sacarose obtiveram escores compreendidos entre 7,15 (doçura) e 8,25 (cor).As geleias isentas de sacarose tiveram escores que variaram de 4,93 (doçura) a 7,08 (aroma), e em apenas um atributo sensorial obtiveram nota superior a 7,0. Dentre as geleias avaliadas, as convencionais demonstraram as maiores frequências de aceitação (> 80 %) e intenção de compra (> 75 %), que indicam o potencial destes produtos para futura industrialização e comercialização.


This study aimed at developing the conventional and dietary jams made from umbu-caja, and their physical-chemical, microbiological and sensory characteristics were evaluated. Umbu-caja pulp, commercial sucrose and high methoxylated pectin (HMP) were used for processing the conventional jams. For preparing the dietary jams, the sucrose and pectin HMP were replaced by aspartame and low methoxylation pectin (LMP). The formulations were concentrated in an open pan until achieving the soluble solids content of ~63 oBrix (conventional jam) and of ~12.5 °Brix (dietary formulation), and then they were poured into glass jars. The microbiological assays, the acceptance tests (color, appearance, aroma, consistency, taste, sweetness, overall impression), and the purchase intent were performed for analyzing the processed jams. The both products were within the microbiological standards established by legislation. The sucrose-containing samples presented scores ranging from 7.15 (sweetness) to 8.25 (color). The sucrose-free jams showed scores ranging from 4.93 (sweetness) to 7.08 (aroma), and in only one sensory attribute achieved a score higher than 7.0. The conventional jams showed the highest frequency of acceptance (> 80 %) and in purchase intent (> 75 %), indicating a potential for future industrialization and commercialization.

ABSTRACT

The aim of this study was to determine the antioxidant activity of Moringa (Moringa oleifera Lam.) leaves flour in beef burger during storage for 120 days. Six hamburger formulations were processed: one control (without the use of additives), four with addition of Moringa leaves flour (0.10, 0.15, 0.20, and 0.25 g/100 g aggregate), and one with addition of synthetic antioxidant Propyl Gallate (0.01 g/100 g aggregate). The products were analyzed for their chemical composition with determinations of moisture, protein, dietary fiber, lipids, ash, carbohydrate, and caloric value after preparation. Microbiological and acceptance testing were performed at the beginning and after 120 days of storage. Determination of pH, instrumental color and lipid oxidation (TBARS) were performed at 1, 30, 60, 90 and 120 days of storage. All samples showed physical-chemical and microbiological tests in accordance with the Brazilian legislation. pH measurements were between 5.48 and 5.90; however, the intensity of red has changed according to the treatments and storage periods. The addition of Moringa leaves flour had no antioxidant effect on burgers, but its inclusion not only contributed to the improvement of nutritional quality, but also did not harm product acceptance.


El objetivo de este trabajo fue verificar la acción antioxidante de una harina de hojas de Moringa (Moringa oleífera Lam.) en carne de hamburguesa bovina durante su almacenamiento por 120 días. Se procesaron seis formulaciones de hamburguesa: una de control, sin uso de aditivos, cuatro adicionadas con harina de hojas de Moringa (0,10; 0,15; 0,20 y 0,25 g/100 g de masa) y una adicionada con antioxidante sintético Propil Galato (0,01 g/100 g de masa). Los productos se analizaron, en cuanto a su composición química, con determinaciones de humedad, proteína, fibra alimentaria, lípidos, cenizas, carbohidratos y valor calórico, y, tras la preparación, análisis microbiológicos y pruebas de aceptación, realizados tanto al inicio como al cabo de 120 días de almacenamiento. También se analizaron, con determinación de pH, Color instrumental y oxidación lipídica (TBARS), a los 1, 30, 60, 90 y 120 días de almacenamiento, respectivamente. Todas las muestras presentaron características físico-químicas y microbiológicas de acuerdo con la legislación nacional vigente. Los valores de pH oscilaron entre 5,48 y 5,90 y solamente la intensidad del rojo sufrió modificaciones debido a los tratamientos y periodos de almacenamiento. La adición de harina de hojas de Moringa no ejerció efecto antioxidante en las hamburguesas, sin embargo su inclusión contribuyó para mejorar la calidad nutricional y no perjudicó la aceptación del producto.

Foram processadas seis formulações de hambúrguer, sendo uma controle, sem o uso de aditivos, quatro adicionadas de farinha de folhas de Moringa (0,10; 0,15; 0,20 e 0,25 g/100 g de massa) e uma com adição de antioxidante sintético Propil Galato (0,01 g/100 g de massa). Os produtos foram analisados quanto à composição química, com determinações de umidade, pro¬teína, fibra alimentar, lipídeos, cinzas, carboidratos e valor calórico após o preparo, além de análises microbiológicas e teste de aceitação realizados no início e aos 120 dias de armazenamento, e determinação de pH, cor instrumental e oxidação lipídica (TBARS), realizadas com: 1, 30, 60, 90 e 120 dias de armazenamento. Todas as amostras apresentaram características físico-químicas e microbiológicas de acordo com a legislação nacional vigente. As medidas de pH ficaram compreendidas entre 5,48 e 5,90, e somente a intensidade de vermelho sofreu alterações de acordo com os tratamentos e períodos de estocagem. A adição de farinha das folhas de Moringa não exerceu efeito antioxidante nos hambúrgueres, porém sua inclusão contribuiu para a melhoria da qualidade nutricional e não prejudicou a aceitação do produto.

ABSTRACT

The aim of this work was to study the effects offortification ofpo-tato bread with whole soybean flour on theirphysicochemical and sensory properties. Control formulations containing 30%, 50% and 70% soybean flour were developed. Firmness, cohesiveness, gumminess and chewiness of bread increased with the addition ofwhole soybean flour. The contents ofprotein, dietary fiber and minerals calcium, zinc, magnesium, copper and phosphorus increased with elevated concentration of soybean flour, while the lipid profile was unchanged. Preference mapping indicated greater acceptance of the control and 30% whole soybean flour formulations. These results were correlated to texture and showed that the greater firmness negatively affected its acceptance. It was concluded that the formulation with 30% was the best option offering good acceptance and high content of nutrients, which makes the flour substitution a viable alternative for the preparation of fortified baking products with equal sensory and physicochemical quality.


O objetivo deste trabalho foi investigar os efeitos da fortificaçao de paes de batata com farinha integral de soja sobre as propriedades físico-químicas e sensoriais. Foram desenvolvidas as formulaçôes controle e contendo 30%, 50% e 70% de farinha de soja. A dureza, coesividade, gomosidade e mastigabilidade dos paes aumentaram com a farinha integral de soja. Os teores de proteína, fibra alimentar e dos minerais cálcio, zinco, magnésio, cobre e fósforo foram maiores em funçao do aumento da concentraçao de farinha integral de soja, enquanto o perfil de lipídios nao foi alterado. O Mapa de Preferência Interno indicou maior aceitaçao das formulaçôes controle e com 30% de farinha integral de soja. Esses resultados foram correlacionados à textura das formulaçôes e revelaram que a maior dureza afetou negativamente sua aceitaçao. Concluise que a formulaçao com 30% foi a melhor opçao em relaçao aos parâmetros físico-químicos e sensoriais, o que torna a substituiçao das farinhas alternativa viável para elaboraçao de produtos de panificaçao fortificados e com qualidade físico-química e sensorial.

ABSTRACT

In the present study the effects on shelf life and sensory acceptance of gamma-irradiated refrigerated poultry breast fillets subjected to modified atmosphere packaging (80% CO2/20% N2 or vacuum) were investigated. After irradiation with 2 kGy, sensory acceptance tests and monitoring of bacterial growth were performed in order to determine the sanitary quality of the samples. It has been found that irradiation, used in combination with modified atmosphere packaging, can double the shelf life of refrigerated poultry breast fillets by reducing the populations of aerobic mesophilic and psychrotrophic bacteria, enterobacteria, coliforms, Listeria spp. and Aeromonas spp., without significantly modifying its color or its overall appearance, the lactic acid bacteria being the most resistant to exposure to radiation and carbon dioxide.

ABSTRACT

Neste trabalho, foi avaliada a substituição de 5, 10 e 15 por cento de farinha de trigo por fécula de mandioca na elaboração de biscoito doce. Ambas, farinha e fécula, foram submetidas à caracterização físico-química, reológica e análise térmica diferencial (DTA). Os biscoitos produzidos foram comparados por meio de análises sensoriais e microbiológicas. O resultado da análise térmica diferencial não mostrou qualquer alteração no comportamento de gelatinização do amido. O teste de aceitação sensorial mostrou que a crocância foi o único atributo que apresentou diferença significativa, indicando a viabilidade técnica de substituição da farinha de trigo por 15 por cento de fécula de mandioca.


This research evaluated the substitution of 5, 10 and 15 percent of wheat flour for cassava starch in sweet cookies production. Both, flour and starch were submitted to the physicochemical, rheological and differential thermal analysis (DTA). The produced cookies were compared through sensory and microbiological analyses. The DTA result didn´t show any alteration in the starch gelatinization behavior. The result of the sensory acceptance analysis showed that crispness is the unique attribute that presented significant difference, indicating the technical viability of wheat flour substitution for 15 percent of cassava starch.

ABSTRACT

The objective of this study was to evaluate the inclusion of minced fish (MF) (0, 20, 40, 60, 80 and 100 percent), obtained from Nile tilapia filleting waste, in sausage and determine their physicochemical, nutritional and sensory properties. The sausages showed a decrease in protein and increase in fat content with increasing inclusion of MF. The nutritional quality of the products was high, with digestibility over 85 percent. The parameters of texture instrumental and yellow color (b*) decreased with the increasing inclusion of MF. The sensory evaluation of the color showed that the maximum level of inclusion of MF was not well accepted by the panelists. The sausage with the best acceptance for the flavor attribute was those with 60 percent of MF. The results showed good nutritional quality of sausages utilizing MF of Nile tilapia filleting waste and according to the sensory evaluation, the maximum level of inclusion should not exceed 60 percent.


O objetivo deste estudo foi avaliar a inclusão de carne mecanicamente separada (CMS) (0, 20, 40, 60, 80 e 100 por cento), obtido de resíduos de filetagem de tilápias do Nilo, em salsichas e determinar suas propriedades físico-químicas, nutricionais e sensoriais. As salsichas apresentaram diminuição de proteína e aumento de lipídeos com a inclusão de CMS. A qualidade nutricional dos produtos foi alta, com digestibilidade acima de 85 por cento. Os parâmetros de textura e cor instrumental amarela (b*) diminuíram com inclusão crescente de CMS. A avaliação sensorial da cor mostrou que o nível máximo de inclusão de CMS não foi bem aceito pelos provadores. As salsichas com melhor aceitação do atributo sabor foram aquelas com 60 por cento de CMS. Os resultados demonstraram a boa qualidade nutricional das salsichas utilizando CMS de resíduos de filetagem de tilápias do Nilo e de acordo com avaliação sensorial, a porcentagem máxima de inclusão é de 60 por cento.

ABSTRACT

A farinha obtida dos resíduos de processamento da polpa de acerola foi utilizada para preparar biscoitos tipo cookies. O efeito da mistura dessa farinha foi avaliado na composição e aceitabilidade dos cookies. Foram elaboradas formulações com 0% (padrão), 10% (Tipo I) e 20% (Tipo II) de farinha de resíduos de acerola em substituição parcial da farinha de trigo. A farinha de resíduos, constituída de cascas e sementes, apresentou 8,60% de umidade, 8,88% de proteína, 0,52% de lipídios, 3,03% de cinzas, 24,33% de açúcares redutores em glicose, 8,09 μg.g-1 de carotenoides totais, 47,5ºBrix e 9549,61 mg de ácido ascórbico.100g-1. Os cookies preparados com farinha de resíduos obtiveram menores notas na impressão global (5,34-Tipo I e 4,14-Tipo II) em comparação à formulação padrão (6,62). Há necessidade de se efetuar melhorias, como ajuste no teorde umidade nas formulações, para maior aceitação do produto. No biscoito padrão não houve detecção de carotenoides totais e ácido ascórbico, mas estes estiveram presentes no Tipo I, respectivamente, nos valores de1,51 μg.g-1 e 2172,60 mg.100g-1. A farinha de resíduos de acerola, pelo elevado teor de ácido ascórbico, torna se boa alternativa para substituição parcial da farinha de trigo em cookies para melhorar seu valor nutritivo.


Acerola pulp processed residues flour was used as a mixture material for cookies. The effect of the addition ofthis flour was evaluated in the cookies composition and acceptability. Formulations containing 0% (standard),10% (Type I) and 20% (Type II) of acerola residues flour were prepared partially replacing the wheat flour.The residue flour, consisting of peels and seeds, showed 8.60% humidity, 8.88% protein, 0.52% lipids, 3.03%ash, 24.33% of reducing sugars into glucose, 8.09 μg.g-1 of total carotenoids, 47.5°Brix, and 9549.61 mg of ascorbic acid.100g-1. The cookies prepared with acerola residue flour formulations were not well scored onthe global impression of them, being 5.34 (Type I) and 4.14 (Type II) when compared with the standard one (6.62). Improvements as adjusting the moisture contents have to be carried out for increasing cookies acceptance. Neither total carotenoids nor ascorbic acid were detected in the standard cookies, however in Type I cookies these substances rates were of 1.51 μg.g-1 and 2172.60 mg.100g-1, respectively. Acerola residue flour showed a distinct advantage owing to its high ascorbic acid contents, being an useful alternative for partially replacing the wheat flour to improve the nutritional value of prepared cookies.

ABSTRACT

This study evaluated the composition (soluble and total solids, pH, titratable acidity, protein, fat, ash, total reducing sugar), the sensory attributes (appearance, odor, consistency and taste) and the melting behavior of two experimental formulations of caprine ice cream made with two different fat sources, hydrogenated vegetable fat (F1) and a trans-free fat replacer (F2). Soluble and total solids, fat and total reducing sugar of the ice cream samples were statistically different (p<0.05). The sensory results showed high sensory acceptability index (AI) (>70%) for both formulations, with the exception of the flavour attribute of F1 formulation, which had AI equal to 62.041%. In the meltdown test, the F2 group melted faster than the F1 formulation. The results demonstrated that the source of fat used in the ice cream mix directly interferes with the melting characteristics, acceptance rate and physicochemical composition of ice cream.


O presente estudo avaliou a composição (sólidos totais e solúveis, pH, acidez total titulável, proteína, gordura, cinzas, açúcares totais), os atributos sensoriais (aparência, odor, consistência e sabor) e o comportamento, durante o derretimento, de duas formulações experimentais de sorvete caprino elaborados com duas diferentes fontes de gordura, gordura vegetal hidrogenada (F1) e um substituto de gordura livre de ácidos graxos trans (F2). Os teores de sólidos totais e solúveis, gordura e açúcares totais das amostras de sorvete apresentaram diferenças estatisticamente significantes (p<0,05). Os resultados sensoriais mostram elevado índice de aceitação (IA) sensorial (>70%) para ambas as formulações, com exceção do atributo sabor da formulação F1 que apresentou IA de 62,041%. No teste de derretimento, o grupo F2 derreteu mais rápido que a formulação F1. Os resultados demonstraram também que o tipo de gordura usada interfere diretamente nas características de derretimento, nível de aceitação sensorial e composição do sorvete caprino.

ABSTRACT

Los aminoácidos limitantes en la proteína de algarrobo chileno son isoleucina, treonina y metionina/cisteina. La mezcla de cereales y leguminosas, permite mejorar el balance aminoacídico, ya que las leguminosas tienen más lisina y los cereales son más ricos en aminoácidos azufrados. Debido al interés nutricional del cotiledón de algarrobo, se evaluó la incorporación de harina de cotiledón de algarrobo (HCA) en la elaboración de “snack” dulces y salados. Se prepararon galletas dulces y hojuelas fritas saladas con 0 por ciento, 10 por ciento y 20 por ciento de HCA. En las harinas se determinó, color, granulometría, humedad, composición proximal, lisina disponible, fibra dietética total, soluble e insoluble. A las galletas y hojuelas se les determinaron las mismas características físicas y químicas (excepto granulometría) que las harinas; además se determinó actividad de agua, peso y dimensiones y se calculó el aporte calórico. Se evaluó la calidad y aceptabilidad sensorial de ambos productos. Destaca el alto contenido de proteínas, lípidos, cenizas, fibra cruda (63,6; 10,2; 4,3 y 4,2 g/100g bms, respectivamente), lisina disponible (62,4 mg/g proteína) y fibra dietética total (24,2 g/100g bms) de la HCA. Tanto en las galletas como en las hojuelas con HCA, aumenta significativamente el contenido de proteínas, lípidos, cenizas, fibra cruda, lisina disponible (desde 15,5 a 19,3 y de 20,3 a 29,6 mg lisina/g proteína, respectivamente) y fibra dietética total (de 1,39 a 2,80 y de 1,60 a 5,60 g/100g bms, respectivamente). Todos los tratamientos de galletas fueron igualmente aceptados (“me gusta mucho”); las hojuelas, con 10 por ciento de HCA presentaron la mayor aceptabilidad (“me gusta medianamente”). Se puede concluir que la incorporación de HCA en la elaboración de galletas y hojuelas fritas aumenta el aporte de lisina disponible, su contenido de proteínas y fibra dietética, mejorando la relación fibra soluble/ insoluble, sin afectar sus características fisicas...


Limiting amino acids of the protein from chilean “algarrobo” are isoleucine, theronine and methionine/cyteine. Cereals and legume blends allow to improve the amino acid balance, since legume have more lysine, and cereals are richer in sulphur amino acids. Due to the nutritional interest of “algarrobo” cotyledons, the use of “algarrobo cotyledon” flour (ACF) in sweet and salty snack manufacture was evaluated. Cookies and fried salty chips with 0 percent, 10 percent and 20 percent ACF were prepared. Flours were analyzed for color, particle size, moisture, proximate composition, available lysine, and soluble, insoluble and total dietary fiber. Cookies and chips were analyzed for the same characteristics (except for particle size); besides there were determined water activity, weight and size of the units, and also, the caloric value was computed. Sensory quality and acceptance of both products were evaluated. It is noticeable the high amount of protein, lipids, ash, crude fiber (63.6; 10.2; 4.3 and 4.2 g/100g dmb, respectively), available lysine (62.4 mg/g protein) and total dietary fiber (24.2 g/100g dmb) of ACF. Both, cookies and chips with ACF, showed a significant increase in the amount of protein, lipids, ash, crude fiber and, available lysine (from 15.5 to 19,3 and from 20.3 a 29.6 mg lisina/g protein, respectively), and total dietary fiber (from 1.39 to 2.80 and from 1.60 a 5.60 g/100g dmb, respectively). All of the cookies trials were well accepted (“I like it very much”); chips with 10 percent of AFC showed the highest acceptance (“I like it”). It can be concluded that the use of ACF in cookies and chips manufacture increases the contribution of available lysine; their protein and dietary fiber content, improving the soluble/insoluble fiber ratio, without affect neither their physical nor their sensory acceptance.
